THE COOPERATIVE
The cooperative is located in the village of San Juan del Rio Coco, in the north of the country.
Created in 2008 by hundreds of partners, the cooperative is a non-profit organisation gathering associated producers, a quarter of whom are women.
They cover a total production area of nearly 250 hectares in the north of the country. Which indicates that the average surface area of a farms is 2.7 ha. The associates are small to very small producers: 90% of the partners are small producers with less than 5 ha; 10% only own farms between 5 and 15 ha.
The coopeative is proudly self-reliant, efficiently producing and marketing certified coffee and other products for the use of the comunity. The partners mainly produce Caturra and Catuai, which represent 70% of production, and of this lot. We also find 20% of Catimor and, more recent varieties, like Marseillaisa, catimor, Parainema...
THE PROCESS
The producers collect the cherries at ideal maturity.
The cherries are brought back to the cooperative where they will be washed, then dried on an African bed for 18 days.
