LAS CAMELIAS
The farm is located in the small town of El Paraiso in the Municipality of La Libertad, Huehuetenango.
Located on high mountains and hills, Las Camelias has always been a coffee farm. The Hidalgo family acquired the farm in the 1950s and took benefit from the ideal conditions to grow high quality coffee. It all started with Bourbon and Caturra, varieties they still produce this day; combined today with Sarchimor and Catuai, new varieties brought to the farm both for their highest resistance to diseases and cup quality.
The farm has been in the family since 2 generations. Las Camelias used to be part of a bigger farm owned by Don Silvano the father. In the 1970s Don Silvano Hidalgo inherited a part if this larger farm and decided to call it ‘Las Camelias’.
As a passionate gardener, Don Silvano loves to take care of his Camelias. He believes Camelias are considered the symbol of the utmost refinement of beauty and excellence of eternal love. Love he shares with his farm
THE PROCESS
This is a fully washed lot
After the removal of floaters, the mucilage is removed with water
The coffee dries in Parchment for 16 days on patio
Delicate sweet and floral aromas
a complex cup with notes of chocolate, flower, peach and soft caramel.
